Peanut Blossom Cookies


These peanut buttery cookies with a chocolate kiss on top are a favorite in my family. I grew up on them and I've passed down the love of them to my children. I'd make Peanut Blossoms every year on the first and last day of school and of course several times in between.


These are a tried and true recipe and I'm pretty sure everyone has a recipe for them, but here it is just in case.

Peanut Blossom Cookies

 

Makes 24


  • Preheat oven to 375 degrees.

  • Unwrap approximately 24 chocolate kisses-set aside.

  • 1/2 cup sugar for rolling dough- set aside.



Sift:

1 3/4 cups AP (all purpose) flour

1 teaspoon soda

1/2 teaspoon salt

*Set aside.

Cream:

1/2 cup (1 stick) unsalted butter

1/3 cup peanut butter


Add:

1/2 cup granulated sugar

1/2 cup brown sugar

*Beat until thoroughly combined.


Add:

1 egg

1 teaspoon vanilla

*Mix well.


  • Add the flour mixture and incorporate it as well as you can. Mixture may seem a bit crumbly, but that's okay.


  • Using a cookie scoop, pack the dough and scrap scoop on egde of the bowl so each scoop of dough is the same. Roll the dough in your hands in a tight ball then roll in sugar.


  • Place dough ball on a parchment lined baking sheet and bake 8 minutes.


  • Place a chocolate kiss in the center and bake another 2-3 minutes.


  • Remove from oven and let sit on baking sheet a few minutes before removing to a cooling rack.
