Hearty Chicken Soup


THE BEST CHICKEN SOUP!

One of my favorite meals growing up was when my mom made chicken and noodles. This is a much quicker recipe given the fact that I'm not making my own noodles from scratch. I'm throwing in organic pasta I bought at the grocery and it's still incredibly mouth watering.

This soup is simple & delicious with ALL the flavor. It’s a perfect bowl on a winter evening. It’s also great when you’re not feeling the best and need a comforting meal.


Hearty Chicken Soup!


1 chicken breast- cooked and shredded

(I baked mine with salt and pepper)

10 cups organic chicken broth or stock

2 carrots, small dice

1 parsnip, small dice

3 celery stalks, small dice

1 med onion, small dice

3 garlic cloves, minced

1 T avocado oil

2 bay leaves

1 t dried thyme (rub between fingers before adding to soup)

Salt & pepper to taste

1 1/2 cups orecchiette pasta

1/2 cup fresh Italian parsley

•In a soup pot over med high heat add oil and veggies. Sauté until soft.

•Add garlic cloves and sauté another few minutes.

•Add chicken broth and thyme, bay leaves, S&P. Bring to a boil then add pasta. Reduce heat to medium.

•Add chicken & parsley. You can reduce heat to a simmer. Make sure your pasta is cooked through before serving.

I like to serve mine with mashed potatoes in the bowl then add the soup!
