I threw the cutest strawberry themed birthday party for my daughter Larkin. I tend to go overboard when creating parties, however, this one was simple. I served delicious strawberry cupcakes and strawberry basil water.
1 16 oz container fresh strawberries
2 1/4 cups all-purpose flour
1 T baking powder
1/2 t salt
11/2 cup sugar
3 large eggs
1 t vanilla extract
1/2 cup vegetable oil (I used avocado oil)
1 1/4 cups milk
no dye red food coloring
Cream Cheese Frosting
1 stick butter, softened
1 8 oz block cream cheese, cold
1 tsp vanilla extract
2 cups powdered sugar (may need more)
1/3 c strawberry jam
1/2 c dehydrated strawberries, blend into powder
Strawberry reduction for cake: Clean, hull and slice all fresh strawberries. Put in high speed blender and completely blend. Place in saucepan and bring to a boil then reduce heat until strawberry liquid is approximately 3/4 cup. Cool.
Make the cake:
•Preheat oven to 350°F.
•Line your cupcake pans.
•Whisk together flour, baking powder, salt, and sugar.
•Add eggs, vanilla, oil, milk, and strawberry reduction.
•Using your mixer, mix on medium speed until smooth. Add food coloring until you get the color you prefer. The dye free color isn't vibrant so you can leave it out if you'd like, because your frosting will be pink with the ingredients I've used. •Fill liners 2/3 full with batter.
•Bake for 15-18 minutes until toothpick inserted into the center of cupcakes comes out clean.
Frosting: (I doubled recipe but I had way too much) Here is the single recipe.
•In a bowl mix cream cheese & butter until fluffy.
• Add strawberry jam, strawberry powder and vanilla. Mix until we'll combined.
• Add powdered sugar one cup at a time until you've reached your desired consistency. You may also add half and half, milk or cream if you need to thin it out.
Frost cupcakes. Keep in refrigerator. Take out an hour before serving.
