{Vegan} Greek Pitas

Greek pitas are one of my favorite things to eat. The crisp lettuce and cucumbers, juicy tomatoes, briny Kalamata olives and creamy hummus make this such a satisfying meal.

If you’re into eating healthy and even if you’re not, these pitas will become a favorite!


 

GREEK PITAS



Hummus - store bought or recipe follows

Kalamata Olives - chopped or cut in half

Tomatoes - diced

Red Onion - thinly sliced

Cucumber - thinly sliced or diced

Romaine Lettuce - or lettuce of choice, shredded



Cut pita in half and spread desired amount of hummus inside. Layer the rest of the ingredients.

HUMMUS


Ingredients:


15 ounce can chickpeas, drained and rinsed


4 tablespoons tahini


1 clove garlic, or more to taste


1/2 teaspoon ground cumin


1/2-1 teaspoon salt, or to taste


3 tablespoons fresh lemon juice


4 tablespoons cold water


In a food processor add all the ingredients and process until smooth and creamy. Add additional water one tablespoon at a time until desired consistency. Taste and adjust seasonings.


Pour into a container and drizzle with olive oil. Cover and refrigerate.


Additional Toppings:


Smoked or Regular Paprika

Cumin

Chopped Parsley

Pine Nuts (toasted)

Roasted Chickpeas
