The BEST Roasted Salsa

I'm going to get straight to what you all want...the recipe for this bad boy.


To be honest I don't measure this when I make it. I add the ingredients until it looks and tastes good.


4 Anaheim or Poblano Peppers (I used both, so 2 of each)

6 Roma Tomatoes - diced

Red Onion to taste - about 1/2 cup diced

Cilantro - handful, chopped

Jalapeno- seeds removed and diced

2 garlic cloves, minced

Zest and juice of 1 lime

Sprinkle of salt

Roast peppers under broiler until charred on all sides. Let cool, then peel, seed and diced them.

Add all ingredients into a bowl and combine. Taste and adjust seasonings to your liking.


Serve with tortilla chips. This salsa is also PERFECT on eggs and anything else your heart desires!
