Texas Caviar Dip

What’s better than a dip in the pool? A nice and refreshing dip you don’t have to feel guilty about eating! This Texas Caviar dip is packed with protein from the black beans and loaded with alllll the delicious veggies. Top that off with a flavorful & smoky dressing and you’ve got your next summer favorite! 😋

Texas Caviar Dip
•1 ear fresh corn- cooked and cut off cob
OR 1c frozen corn, thawed
•14 oz Can Black Beans, rinsed and
drained OR 1 can black eyed peas, rinsed & drained
• 1 Large Tomato, seeded & diced
• 1/2 red oinion - diced
•1 Green Bell Pepper Stem and
Seeds Removed OR Mini peppers, diced
• 1 Bunch Cilantro- chopped fine
• 1 avocado- diced
• 1/2-1 jalapeño, diced
FOR DRESSING
• 1/3 c Olive Oil
•1/2T Red Wine Vinegar
• 1 Lime Juice Freshly Squeezed
• 1/2 tsp Pink Salt
• 1 tsp Granulated Sugar
•1/2 tsp Pepper Freshly Cracked
• 1/2 tsp Garlic Powder
• 1/2 tsp Onion Powder
• 1/2 tsp Chili Powder
• 1/2 t smoked paprika
Put dressing ingredients in a jar and shake.
Drizzle over beans and veggies.
