Strawberry Spinach Salad with Poppyseed Dressing
Salad is one of my favorite things to eat, how about you? If you said yes then you’re in the right place.
i like to switch up my salad game though and make different ones so my tastebuds don’t get bored. Ha! Bored tastebuds sound like a bad thing.
Sweet, succulent strawberries are in season so this salad is a must. Pair this delicious salad with some plain goat cheese and a french baguette and you’ll be the happiest person on the planet. The creamy cheese and crusty bread compliment the strawberries so nicely.
This salad was a favorite when I was catering and honestly, if you’re wanting to treat your mom to a yummy lunch for Mother’s Day then this is your recipe.
Strawberry Spinach Salad with Poppyseed Dressing
4 servings
6 cups baby spinach
2 cups strawberries, halved
1/2 c sugared pecans or 3 T slivered almonds, toasted
1 3-4oz log plain goat cheese, crumbled or cut into slices
French Baguette cut into six slices - toasted
Dressing
1/4 cup sugar
2 T sherry or white wine vinegar
1 1/2 t sesame seeds, toasted
1 1/2 t olive oil
1 T red onion, minced
3/4 t poppyseeds
1/4 t paprika
1/8 t salt
Add all ingredients into a jar with a lid and shake until combined. Let dressing set in the refrigerator while preparing salad.
Toss salad with dressing and divide among four plates. Serve with goat cheese bruschetta.
*You can add the goat cheese directly into the salad. I personally like to eat it in the salad AND on the toasted baguette.
