Once you try this salad it’ll be a go-to FOREVER! The orzo is tossed with a savory tarragon dressing and golden raisins add a surprise sweetness that you’ll crave. You’ll wonder why you haven’t thought of this combination before.
1 cup orzo pasta, cooked al dente - drained and rinsed with cold water
2/3 c marinated artichoke hearts, rough chopped
1 c grape tomatoes, halved
1/3 c kalamata olives, sliced
2 T capers, drained
1/3 c golden raisins
3 T Tarragon vinegar or white wine vinegar
6 T extra virgin olive oil
1 T Dijon mustard or coarse grain
1 T lemon juice - freshly squeezed
2 T fresh tarragon, chopped
fresh cracked pepper to taste
Combine dressing ingredients and whisk.
Toss with orzo.
*I've linked my most favorite brand of artichoke hearts below. It comes in bulk, but they are so good and you'll be so grateful you have extra jars in your pantry!
Add the rest of the ingredients and mix.
*Variation: this salad is great with cubed grilled or rotisserie chicken.
Serve with additional tarragon.
