If you're looking for the perfect dessert to complete a Valentine's Day dinner, then look no further. These decadent chocolate brownies with lightly sweetened frosting, topped with strawberries, will have your sweetheart drooling and asking for seconds.
Brownies are such a quick dessert to throw together and when you elevate a basic brownie with frosting and berries you have a masterpiece on your table!
In my opinion there is nothing better than chocolate and fruit...and frosting.
Use your favorite brownie recipe or use the one below, but whatever you do MAKE MY CREAM CHEESE RICOTTA FROSTING! ❤️
2 lg eggs
1/4 c avocado oil
4 T unsalted butter, melted
2 T water
1 t vanilla extract
1 1/4 c sugar
3/4 c all-purpose flour
2/3 c cocoa powder
1/2 c powdered sugar
1/2 t kosher salt
1/2 c semi sweet chocolate chips
12 Oz fresh strawberries, cut into chunks
In a large bowl whisk first five ingredients and set aside.
In a separate bowl whisk together sugar, flour, cocoa powder, powdered sugar and salt.
Slowly combine dry ingredients to wet mixture. Until just combined.
Spread into an 8x8 parchment lined pan.
Top with chocolate chips. I press them in a bit.
Bake in a preheated 325 degree oven for 30-35 minutes or until done.
Cool on wire rack.
Lift brownies from pan using parchment and place on a serving dish.
Spread on frosting (recipe below) and top with strawberries.
Optional: drizzle melted semi-sweet chocolate over the top of berries.
*Keep dessert refrigerated
Cream Cheese Ricotta Frosting
• 8 Oz cream cheese
• 6 Oz ricotta cheese
• 1 T honey
In a bowl, with a hand mixer, beat cream cheese and ricotta until fluffy.
Add honey and continue to whip until incorporated.
Spread on cooled brownie. Top with berries and drizzled chocolate.
