This is the perfect breakfast that’s not only filling, but tasty and pretty. It’s true that we eat with our eyes first, and in this case I couldn’t agree with that statement more. In my opinion, berry and banana chia pudding, served in coconut bowls, is the best! (especially if it’s a breakfast in bed situation)
Berry & Banana Chia Pudding
4 T chia seeds
1 1/2 c unsweetened almond milk
1 T maple syrup
1/2 t vanilla extract
unsweetened coconut flakes
In a small bowl or glass container with a lid, add first four ingredients and stir well. Continue to stir for a few minutes so clumps do not form. Put the chia mixture in the refrigerator for 20-30 minutes.
Wash and slice fruit.
When the chia pudding is ready, divide between two bowls and top with fruit and coconut flakes.
