10 Minute Beet & Pear Salad with Goat Cheese and Candied Walnuts

Honestly, this is a no-brainer and the easiest ‘fancy’ salad you’ll ever throw together. If you want to impress your significant other, a friend or last minute dinner guests, then this should be in your recipe collection.


You can find all these ingredients at any grocery store, however I picked up my beets and mixed greens at Trader Joes.




Beet & Pear Salad with Goat Cheese and Candied Walnuts serves 4


1 bag Mixed Greens

1 Pear, sliced

1 5oz log Goat Cheese, crumbled (can use vegan)

1 box cooked Beets, sliced (see note below)


candied walnuts


1/4 c sugar

1/2 cup walnuts (or nut of your choice)


Put sugar and walnuts in a skillet on medium heat. As the sugar melts the walnuts will start to coat. Make sure to stir constantly so the sugar and nuts don’t scorch.


Once the nuts are coated, remove from the heat and spread them in a single layer on parchment paper.

Dressing:

1/4 c balsamic vinegar

1/4 extra virgin olive oil

1 t Dijon mustard

fresh cracked pepper


Combine all ingredients in a mason jar and shake well.

  1. Place your mixed greens on individual plates and arrange pears, beets and goat cheese on top.

  2. Drizzle with balsamic dressing and top with candied walnuts.

  3. Finish with a little cracked pepper on top.

  4. Serve!

*Note* You can roast fresh beets or buy them in a can. These beets are NOT pickled. Of course, roasting the beets will add more time to this recipe.
